We believe Canberra does and will continue to produce some of the best examples of Riesling in Australia. Its Continental climate is perfectly suited to growing beautifully poised and racy Rielsing. The sub region of Murrumbatemen is at the heart of Riesling country. The fruit for this Riesling is sourced from a vineyard just North of the Murrambateman Village. The Vineyard lies at an altitude of 600 meters above sea level on an ancient decomposed granite Belt that runs either side of the Barton Highway. The ‘Off Dry’ style of wine is a homage to one of my favourite wines from JJ Pruhm in Germany. They have such a great appeal from not only a drinkability point of view but also excellent ability to age and matched with a vast array of food.
For the ‘Off Dry’ Riesling we allow roughly 24 hours of skin contact in the press before gently squeezing to tank. The juice is settled for 24 hours and then racked and allowed to ferment with indigenous yeast. This allows us to stop the ferment through temperature. Once we have arrested the fermentation we then add free run juice back to achieve a seamless balance.
