Hilltops is located around the town of Young, approximately 180 km north west of Canberra. With an altitude of 500 metres above sea level, the region has a distinctly continental climate characterised by hot days and cool nights. Soils vary with yellow crackling clays, basalt and decomposed granite - all contributing unique characteristics to the wines.
A wine with a bright, expressive display of crushed red fruits, rose petals and refined five spice. The palate is full of sweet red fruits, and brown cooking spices while being framed by its elegant structure of whole bunches, fine acidity and French oak.
The grapes were hand picked and whole bunch fermented with 0.5% Viognier. The ferment was allowed to initialise itself under a wild fermentation before being inoculated half way through fermentation to allow for a complex, even fermentation. The wine was then matured in 500 litre puncheons for 12 months being being lightly filtered into bottle.
