2016 Cool Hand Canberra Chardonnay
The Chardonnay grapes are from our Lake George Cullarin vineyard established in 1971 by Dr Edgar Riek.
Stonefruit and lemon rind aromas in harmony with the subtle vanilla notes from French oak barriques. The palate is mineral and subtle, a common trait shared with great Chablis. The acidity is natural and persistent. This wine is textural, fresh and complex with a long zesty finish.
The winemaking is kept rather simple in order to express the Cullarin vineyard. After careful selection the fruit was handpicked, whole bunch pressed directly to French oak barriques for fermentation with a selected yeast. The wine was then matured on full lees in oak for 12 months (10% new) and stirred on a weekly basis. The wine was coarse filtered before bottling. No fining. Vegan friendly.
